Foodies heading to the 2026 Walt Disney World Swan and Dolphin Food & Wine Classic have a brand-new experience to add to their must-do list! For the first time ever, celebrity chefs Michael Mina and Todd English are joining forces for an exclusive collaborative tasting event.
The one-night-only experience will take place on Saturday, November 21, from 3:30-5 p.m. at the Walt Disney World Swan and Dolphin. There is only a limited number of spots available! That means this is shaping up to be one of the most exclusive culinary events of the weekend!
Two Celebrity Chefs, Ten Incredible Courses
James Beard Award-winning chefs Michael Mina and Todd English will work side by side to take guests through a 10-course culinary journey. Each chef will prepare five dishes inspired by the flavors, places, and experiences that have influenced his career.
The courses will also be paired with beverage selections from around the world, including selections from Italy and Napa.
This isn’t simply a tasting menu, either. The intimate experience will include storytelling and culinary demonstrations, with Mina and English interacting directly with guests. They’ll discuss their personal heritage, global travels, culinary philosophies, and the inspiration behind some of the dishes that have helped define their careers.
Both chefs already have a presence at the Walt Disney World Dolphin. Bourbon Steak by Michael Mina offers a modern interpretation of the classic American steakhouse. Todd English’s bluezoo is known for its creative approach to seafood.
Michael Mina’s Tasting Menu
Michael Mina’s portion of the menu showcases his signature combination of refined techniques, bold flavors, and influences from his Middle Eastern heritage.
Guests will enjoy:
- Marinated big-eye tuna with crispy falafel, whipped tahina, and urfa-spiced cucumbers
- Chilled lobster and mango salad with saffron mango sauce, blistered pepper, and avocado

Todd English’s Tasting Menu
Todd English is turning to coastal cuisine and the flavors of the Boston area he calls home for his five courses.
His menu includes:
- Brown butter miso poached lobster with truffled dashi glaze and whipped corn chawanmushi
- Pan-seared Nantucket scallops with fresh pressed apple cider, spiced acorn squash, and toasted hazelnut butter
- House-made pastene cacio pepe with duckling confit au poivre and pecorino espuma
- Roasted Chilean sea bass with blood orange glaze, 8-hour roasted fennel, shaved porcini mushroom, and shaved fennel slaw
- Roasted red beet chocolate gateau with chocolate beet chips and white chocolate golden beet glace
Seafood fans certainly have plenty to look forward to here, with lobster, Nantucket scallops, and Chilean sea bass all appearing on the menu.
Tickets Are Limited
The Michael Mina and Todd English collaborative tasting experience is priced at $295 per person. The event takes place Saturday, November 21, from 3:30-5 p.m., and space is limited.
The tasting is part of the larger 2026 Swan and Dolphin Food & Wine Classic. The popular event transforms the resort into a lively street party with world-class cuisine, international wine and beer tastings, and live entertainment.
Classic admission includes four hours of unlimited food and beverage tastings each night, with dishes representing the Swan and Dolphin’s 23 restaurants and lounges. Guests can also explore themed areas including Chinatown, Carnival Corner, and For the Love of Florida.
